Toronto chef making splash with new pop-up that pays homage to his hometown

While Toronto chef Eddie Ling admits that he's just "trying to figure out" his career right now, his pop-up series, Night Saloon, is a pretty good indication that he's on the right track. "I have been trying different things," Eddie tells me. Fittingly, Chinese comfort food is exactly where the name and concept behind the pop-up came from. The name Night Saloon, Eddie tells me, was taken from the neighbourhood barbecue joint in his hometown — a go-to for he and his friends in their teenage years — which closed down around a decade ago, just as Eddie was settling in Canada. "I am using their name to recall and create some carefree moments of our lives," Eddie tells me.
