If you only subscribe to Apple Music and nothing else, for example, then you're not going to save money by switching to Apple One's Individual plan. It’s worth noting that Apple TV+, Apple Arcade, Apple News+, Apple Fitness+, and iCloud+ can always be shared with your family, whether you subscribe separately or with an individual Apple One plan, using the free Family Sharing feature.
