All the while, they kept ALMA + GIL alive with weekend pop-ups. "There's no hiding behind an owner or a concept that is pushed on us," Quintero tells Dished Toronto, "so it's really fun." Of course, you can also opt to mow down on Sou's famous breakfast sandwiches. Given that the new ALMA + GIL gets to be whatever Quintero and Sou want to make it, the possibilities are endless.
